1 c. crushed pineapple 3 eggs, beaten 1 lb. mashed sweet potatoes 4 tbsp. brown sugar 5 tbsp. peanut butter Dash of salt 1/2 c. miniature marshmallows 1/4 c. chopped, dry roasted peanuts Drain pineapple. In blender, mix with eggs, sweet potatoes, brown sugar, peanut butter and salt; pour into an 8 x 8 inch buttered pan. Top with marshmallows and peanuts. Bake at 350 degrees until heated through and marshmallows are melted and golden brown. An unusual and delicious side dish. |
