EASTER FRITTATA (OMELETTE)
 

6 large eggs
1/2 c. water
1/2 tsp. baking powder
3/4 c. flour
1/2 tsp. salt
1/2 lb. fresh cheese, diced
1/2 lb. Ricotta cheese
1/2 lb. hot or sweet sausage, cooked and crumbled
1/2 lb. salami, diced
1 tsp. oil

Beat eggs and water well. Add flour, baking powder and salt. Add fresh cheese, ricotta and sausage and salami. Mix well. In large skillet add oil and pour batter into oil when warmed. On medium heat, cook until crust forms on bottom. Flip over on large dish and slice back into pan to cook other side. Then bake in 325 degree oven for 20 minutes.
