Colorful and redolent of garlic, this dish is a meal in itself. Preparation time: 10 minutes. Cooking time: 15 to 20 minutes. Serves 6. 2 tbsp. olive oil 1/4 c. butter 2 or 3 cloves garlic, minced 1 c. half and half 1 tsp. salt Pepper to taste 1/2 c. freshly grated parmesan cheese 1 lb. vermicelli
Cut the broccoli into florets, including some of the thinner stalks. Steam quickly, until barely tender. Chop fairly fine. Heat the olive oil and butter in a large saucepan. Add garlic and cook over low heat for about 2 minutes. Stir in half and half, salt and pepper. Heat until almost bubbling, then add broccoli and parmesan cheese. Cover, take off the heat, and let sit for a couple of minutes to blend the flavors. Cook vermicelli, according to package directions. Toss sauce with freshly cooked pasta and serve hot, with additional cheese if desired.
