TURNIP CASSEROLE
 

5 sm. turnips, peeled & sliced
2 tbsp. butter
1 1/2 c. milk
1 c. soft bread crumbs
1/2 c. (2 oz.) shredded cheddar cheese
1/4 tsp. salt
1/8 tsp. pepper
1/2 c. soft bread crumbs
1 tbsp. butter, melted

Place turnips in a large saucepan; cover with water and bring to a boil. Reduce heat, cover, and simmer 15 minutes or until turnips are tender. Drain well and set aside.

Melt 2 tablespoons butter in a medium saucepan; stir in milk. Add 1 cup bread crumbs, cheese, salt and pepper; cook over low heat, stirring until thickened. Stir in turnips. Spoon mixture into a lightly greased 1 1/2 quart casserole. Combine 1/2 cup bread crumbs and 1 tablespoon melted butter; sprinkle over casserole. Bake, uncovered at 375 degrees for 20 minutes. Yield: 6 to 8 servings.
