2 lb. navy beans 9 c. water 1 lb. salt pot, diced bacon or ham 3 tart apples, peeled, cored and coarsely chopped 1 med. chopped onion 1/2 c. brown sugar 1/2 c. molasses 3 tsp. dry mustard 3 tbsp. vinegar 1/4 tsp. pepper Wash and soak beans overnight in the water. Add the salt pork and cook about 21 hour. Pour into bean pot, add remaining ingredients. Cover, bake at 300 degrees for about 6 hours. Add warm water if necessary. This is a delicious bake beans recipe that I have found only in Michigan many years ago. |
