EASY SUMMER SQUASH
 

8-10 fresh 6-8 inch yellow squash
2 med./lg. yellow onions
3/4 stick "butter"
1 tsp. salt

Clean and slice in 1/4 inch slices all yellow squash. Place sliced squash in large pot and boil in 2 quarts of water. Add 1 teaspoon salt to boiling water and squash.

Peel and dice onions. Saute onions in 1/2 stick of butter while squash is boiling.

Boil squash approximately 30 minutes or until tender. Drain water form squash and place squash in skillet with sauteed onions. Add remaining 1/4 stick of butter.

Simmer 30-35 minutes turning frequently. Serve piping hot. Season to taste with salt and pepper.
