2 tbsp. butter 2 tbsp. chopped onions 1/2 tsp. minced garlic 1 c. converted rice 1 tbsp. turmeric 1 1/2 c. chicken broth 1 bay leaf 2 sprigs thyme or 1/2 tsp. dry Salt & pepper to taste Melt 1 tablespoon butter in a saucepan and add the onion and garlic. Cook until wilted. Add the rice and turmeric, stir to coat. Add the broth, bay leaf, thyme, salt and pepper. Cover and bring to a boil. Simmer and cook for 17 minutes. Uncover and stir in the remaining butter. Toss gently to blend well. Remove bay leaf. Yield: 4 servings. |
