4 sm. green peppers Bread crumbs Butter STUFFING: 2 c. potatoes, mashed with a little butter & milk, season with salt & pepper 1 tsp. grated onion 1/4 tsp. paprika 1/4 c. cream 1 tbsp. butter 1/2 tsp. sage 2 egg yolks, beaten Salt Preheat oven to 400 degrees. Mix all stuffing ingredients together. Cut peppers in half lengthwise and remove seeds. Simmer in boiling water for 5 minutes. Drain and put peppers in shallow baking dish. Fill peppers with potato stuffing. Sprinkle with dry bread crumbs and dot with butter. Bake for 20 minutes or until tops are lightly browned. May be served with tomato sauce or even a mushroom and onion sauce. Serves 4. Peppers may also be left whole and stuffed. |
