EASY SOUFFLED MUSHROOMS
 

16 lg. mushrooms
1/4 c. butter
1/2 tsp. minced garlic
1 (12 oz.) pkg. frozen spinach souffle, thawed
8 tsp. grated Cheddar cheese
Paprika

Heat oven to 350 degrees. Cut out stems of mushrooms (save for future use). Melt butter in medium size skillet over medium heat. Add garlic and cook for 1 minute. Place mushrooms in skillet cavity side down and cook until lightly browned, about 2-3 minutes, turning once.

Place mushrooms cavity side up in a baking pan, fill each with 1 rounded tablespoon of souffle, top with 1/2 teaspoon cheese. Sprinkle with paprika. Bake for 20 minutes or until souffle filling is puffy and set, about 20 minutes.
