HONEY-CINNAMON CANDIED YAMS
 

6 lg. yams
1 1/2 tbsp. cornstarch
2 tbsp. cold water
1 1/2 c. honey
1/2 tsp. cinnamon
1/8 tsp. nutmeg
1 1/2 tsp. grated lemon rind
2 tsp. lemon juice
1/4 c. orange juice
1 tsp. salt
6 tbsp. butter

Grease a large ovenproof casserole. Set aside. Scrub yams. Cook in boiling salted water until tender. Drain. Rinse in cold water. Peel and cut in half lengthwise. Place in casserole.

Dissolve cornstarch in cold water. Combine honey, cinnamon, nutmeg, lemon rind, lemon juice, orange juice, and salt in a saucepan. Bring to a boil. Add cornstarch and thicken, stirring constantly. Remove from heat. Add butter. Pour mixture over yams. Bake for 15 minutes in preheated 375 degree oven.
