Prepare 1 cup uncooked rice according to directions. 2 cans cream of broccoli soup 1 (8 oz.) pkg. sour cream 4 tbsp. butter 1 med. onion, chopped 1 (8 oz.) pkg. shredded Cheddar cheese 2 tbsp. dry bread crumbs
Brown the chopped onion in the 2 tablespoons of butter. Mix in with the cooked rice. Then stir 1 can and 1/2 cup sour cream and 1/2 of the cheese into the rice. Put on bottom of greased casserole dish.
Next, put cooked broccoli on top of that layer. Mix the other can of soup and the rest of the sour cream and pour on top of broccoli. Sprinkle with rest of cheese and pour 2 tablespoons of melted butter over the cheese and sprinkle with bread crumbs. Bake in 425 degree oven for about 20 to 25 minutes until top gets browned. This feeds a big crowd.
