1 or 2 c. tomato sauce 1 tsp. oregano 1 dash salt and pepper Mozzarella cheese Parmesan cheese Peel and slice egg plant into 1/2 inch slices. Soak in salt water 2 to 3 hours dry and dip in flour and brown in hot oil. Place in flat baking pan and cover each layer with Mozzarella cheese and 1 can tomato sauce mixed with 1 teaspoon oregano and dash of salt and pepper. Sprinkle with Parmesan cheese and bake 30 minutes in 350 degree oven. If large eggplant and large dish use 2 cups tomato sauce more cheese the better it is. Don't cover dish. |
