BLANCHED GREENS IN OYSTER SAUCE
 

3/4 lb. mustard greens, asparagus or Chinese cabbage stalks
6 c. water to blanch vegetables
6 tbsp. oyster sauce
3 tsp. sugar

Blanch greens in about 6 cups of boiling water for a few minutes, until just cooked or when greens turn a darker color. Remove and cool under tap water. Drain. Cut stalks into 2 to 3 inch lengths and arrange on serving platter. Dissolve sugar in oyster sauce. Re-heat vegetables (20 seconds in a microwave) and pour oyster sauce mixture over them. Serve immediately.

VARIATION: Wrap greens in plastic wrap and place in microwave oven, 4 minutes at high heat. Remove and cool under tap water. Follow directions as above.
