1 egg plant
1 tsp. sage
3/4 tsp. salt
1 1/2 c. onion, finely chopped
1 1/2 c. green peppers, finely chopped
1/4 c. prepared skillet corn bread recipe
1/4 c. melted butter
1 1/2 c. chicken stock or broth
2 eggs
1 c. grated cheese

Peel and dice egg plant into small cubes. Place in salted water for 10 to 15 minutes. Drain. Cook in small amount of water until tender. Add onions and peppers last few minutes. Drain and let cool. Add sage, salt, melted butter, chicken broth and corn bread, broken into small pieces. Stir together and let stand 10 minutes. Add eggs, mix and mash with vegetable masher. Pour into buttered baking dish. Sprinkle grated cheese on top. Bake in 350 degree oven about 45 minutes.
