EASY SCALLOPED POTATOES
 

8-10 med. red or white potatoes, scrubbed and thinly sliced
1 med. onion, thinly sliced
2 cans cream of mushroom soup
1/2 c. milk, more if thinner sauce is desired
Salt and pepper to taste
2 c. shredded yellow cheese

Preheat oven to 350 degrees.

Grease 13 x 9 x 2 inch baking dish. Layer potatoes and onions in baking dish. In small saucepan combine soup and milk until well blended. Pour over potatoes and onions. Salt and pepper to taste. Bake covered for 1 hour. Remove cover and sprinkle with cheese. Bake 15 minutes longer.

VARIATION: For a main dish, add cubed ham before baking.
