BROCCOLI BREAD CASSEROLE
 

10 oz. box frozen broccoli, thawed, drained and left raw
1 box Jiffy corn bread mix
1 onion, chopped
2 c. grated cheese
4 eggs, well beaten
1 stick butter, melted
1/2 tsp. salt
Chopped ham or sprinkled bacon (optional)

Grease a 9 x 13 inch baking dish. mix the well-drained raw chopped broccoli with the corn bread mix, chopped onion, eggs, salt, grated cheese and melted butter together and pour into the baking pan. Bake at 375 degrees for 30 - 45 minutes, until set. Raise oven to 400 degrees and bake until nicely browned, about 12 - 15 more minutes. Chopped ham or bacon can be added or sprinkled bacon on top. This dish freezes very well for later eating.
