POTATO BREAKFAST CASSEROLE
 

3 med. Russet potatoes
6 slices bacon, diced
1 c. shredded Swiss cheese
1/2 c. creamed cottage cheese
5 eggs, beaten
1/4 c. minced green onion
1/2 tsp. salt
4 drops Tabasco sauce
Parsley

This part you can do the night before: Cook potatoes in boiling, salted water until tender. Peel and dice to make 2 1/2 cups. Fry bacon and drain. Combine cheeses and eggs. Cover these ingredients and refrigerate overnight.

In the morning, brown green onions and potatoes in a little oil or butter. Combine with egg mixture. Season with salt and Tabasco.

Turn into shallow, buttered baking dish. Bake at 400 degrees (375 degrees for glass pan) 15 minutes. Reduce heat to 350 degrees and bake 15 minutes longer or until set. Garnish with parsley. Serves 6.
