6 slices bacon 1 (12 oz.) frozen potatoes 1/4 c. milk Red and green peppers 6 eggs, beaten 1/2 tsp. shredded sharp cheese Cook bacon until crisp. Reserve drippings. Add frozen potatoes add peppers, cook over low heat until crisp and light brown. Combine eggs, milk, salt and pepper. Stir well and pour over potatoes. Top with cheese. Sprinkle with crumbled bacon. Cover and cook over low heat for 10 minutes. Cut into wedges. |
