10 fresh brown eggs 1/4 c. grated Romano cheese 1/2 c. grated Mozzarella cheese 1 c. diced potatoes, boiled 1 tomato, diced 1/2 green pepper, diced 2 oz. prosciutto ham or genona salami, diced 1/4 c. chopped parsley 2 lg. scallions, diced diagonally 1/2 c. cooked mushrooms Toasted Italian bread The omelette, called a frittata is a great dish to serve when entertaining. Scramble eggs in large bowl. Add all ingredients to eggs. Save some parsley for garnish before serving. Take 2 large skillets, add olive oil and a little butter to grease all sides of pan. Heat well; add mixture. Split between 2 skillets. Turn omelette only once by placing inverted dish over skillet. Cook additional 3-5 minutes. Lower heat; turn frittata onto plate and cut into wedges. Serves 6. |
