BREAKFAST CASSEROLE
 

Lower in fat and cholesterol. 1 1/2-2 c. low fat (or part skim) mozzarella cheese, grated 2-2 1/2 c. skim or low fat milk 2 c. Egg Beaters or 3 whole eggs + 6 egg whites 6 slices bread, cubed (I use leftover French bread 1 tbsp. dried mustard Mushrooms (opt.) Green onion (opt.)

Grease a large Pyrex or lasagne pan. Place bread on the bottom of the pan and grate cheese on top. Add sausage and if desired, the mushrooms and green onion. Beat eggs, add to milk; add salt and pepper and pour over cheese and bread. Bake at 325 to 350 degrees for 35 to 40 minutes or until eggs have "set". Can be prepared the night before. Serves 6 to 8.
