BREAKFAST CASSEROLE
 

Approximately 3 slices cubed ham
2 (1 lb.) pkgs. hash brown potatoes
1 lb. Longhorn cheese, shredded
14 eggs
2/3 c. milk
1 tsp. salt

Use 9 x 13 inch ungreased pan. Cover bottom of pan with cubed ham. Fry hash brown potatoes. Scatter potatoes over ham in pan. Scatter 1/2 pound shredded cheese over potatoes in pan. Scramble 14 eggs, 2/3 cup milk, and 1 teaspoon salt lightly (do not cook hard, leave slightly raw). Spread eggs over ham, potatoes, and cheese mixture. Sprinkle other 1/2 pound cheese (grated) over top of eggs. Bake for 30 minutes at 350 degrees. Cut in squares and serve. (Mixture may be made the night before you want to use it. Refrigerate and then bake just before serving.) This makes 12 large servings.
