PFANNKUCHEN (GERMAN FILLED PANCAKES)
 

1 cup sifted flour
1 1/2 tsp sugar
1/2 tsp salt
1 egg
1 cup milk
1/2 tsp vanilla
3 tablespoons butter
jam
sour cream or confectioners' sugar

Sift together in large bowl the sifted flour, sugar, and salt. Beat the egg, milk and vanilla together in small bowl and add to the flour mixture. Mix thoroughly.

Heat the butter/butter in a frying pan over medium heat until it sizzles. Drop the flour mixture by spoonfuls into the pan and fry the pancakes until they are golden brown, turning once. (Lift slightly with the spatula to tell when to turn them.) Repeat until all the batter is used, adding more butter to the pan if necessary. The pancakes should be about 4 inches in diameter.

Spread the pancakes with your favorite jam and roll them up. Top with sour cream or confectioners' sugar.
