PEANUT BUTTER SOUP
 

4 c. milk (or 2 evaporated milk & water)
1 c. peanut butter
1 onion, minced
1/2 tsp. salt
Dash paprika & pepper
1 tbsp. butter
1 tbsp. flour

I often substitute 2 cups of chicken broth for 2 cups of milk.

Combine milk, peanut butter, salt and pepper in the top of a double boiler. Saute onions in butter. Add flour and put with other ingredients into double boiler. We prefer the smooth peanut butter for the soup. It becomes a thick creamy soup when gently cooked and is delicious when served with a fresh fruit salad.
