PEEL - A - POUND SOUP
 

2-4 chicken bouillon cubes (2 big ones by Knorr are good)
4 c. water to begin (more later as needed)
1 bunch green onion, cut up or 1 big onion
4 or 5 stalks celery, sliced
4 or 5 lg. carrots, sliced
1 sm. head cabbage, chopped
1 can stewed tomatoes, cut sm.
1 lg. can V-8 juice
Fresh watercress or dill if available

Dissolve bouillon cubes in 4 cups water and bring to boil. Add all chopped and sliced vegetables, canned stewed tomatoes, and V-8 juice. Stir and bring to boil again. Cook no more than 5 minutes. Turn off heat. If you have watercress or dill, chop and scatter on top. Cover and let sit. When cool enough, stir and put in large refrigerator container and chill. Reheat only the amount to be eaten each day. (Keeps vegetables crisp.)

Note: This recipe is supposed to have so much fiber in it that it requires more calories to digest than it supplies. When eaten by itself (as much as you want!) for lunch each day and combined with an exercise program, it helps you loose weight - hence, Peel-a-Pound Soup.
