4 oz. green peas 2 onions 2 c. white sauce Salt and pepper to taste 1/2 c. croutons Boil peas and onions in 4 cups of water. Blend in a blender and strain. Add white sauce, salt and pepper and mix thoroughly. Serve hot topped with croutons. WHITE SAUCE FOR SOUP: 2 tbsp. butter 2 tbsp. flour 2 c. milk Salt and pepper to taste Melt butter, add flour and cook for 2 minutes without browning, while stirring constantly. Remove from heat and gradually add milk. Mix well until blended. Return to heat and cook slowly, stirring until sauce thickens. Add salt and pepper and mix well. |
