2 tbsp. butter 1 lb. stewing beef, cut into 1/2 inch cubes 1 med. onion, chopped 4 c. beef stock 1/2 c. chopped dried apricots 1/2 c. chopped dried prunes 1 clove garlic, halved 1 tsp. ground ginger 1/4 c. cornstarch, dissolved in 1/2 cup cold water Oat Flour Biscuits (see recipe) Melt butter in a Dutch oven. Add beef cubes and brown on all sides. Add onions and saute until translucent. Stir in stock, apricots, prunes, garlic, and ginger. Simmer for about 2 hours or until meat is tender. Discard garlic. Remove meat with a slotted spoon. Add cornstarch mixture to pot and stir constantly over medium heat until gravy thickens. Return meat to gravy and keep stew warm while biscuits are prepared. |
