1 qt. fresh or canned tomatoes 1/4 tsp. black pepper 4 med. potatoes, cut in cubes 1 sm. head of cabbage, cored & shredded 1 ham hock with meat or ham bone plus 1 lb. ham scraps 3 qts. water 3 onions, chopped Dash of cayenne Salt to taste Boil ham in water with pepper and onions. If ham has been previously cooked, 2 hours will be sufficient; if not, 3 hours. Do not add salt until later, as the ham is so salty. More may not be necessary. Add potatoes and cabbage and tomatoes and simmer 1 hour longer. Skim off excess fat before serving. |
