4 c. seeded, peeled and chopped cucumber 2 c. water 2 c. plain yogurt 1 clove garlic 10 to 12 fresh mint leaves 1 tbsp. honey 2 tsp. salt 1/4 tsp. dill weed Chopped chives or scallions Puree all ingredients together in blender. Serve very cold. Garnish with chives and scallions. (Makes 4 to 6 servings.) |
