MINESTRONE SOUP
 

1 onion, chopped
3 tbsp. olive oil
3 tbsp. tomato paste
6-8 c. water
2 potatoes, peeled and sliced
1 can red kidney beans, do not drain
3 celery stalks, chopped
1/2 green cabbage, chopped
1 tbsp. Italian seasoning OR 1 tsp. basil, 1 tsp. oregano, 1 tsp. sage
Any frozen vegetable such a 1 c. corn or peas, or lima beans

Saute onion and celery in oil until onion is translucent. Add 6 cups water, cabbage, tomato paste, and seasonings. Simmer 10 minutes covered. Add potatoes, carrots, and zucchini and simmer covered for 10 minutes. Add kidney beans and liquid and any frozen vegetables. Heat until hot. Serve with Parmesan cheese.
