MOTHER'S CREAM OF ZUCCHINI SOUP
 

2 c. chicken broth
Add 1 nice sized cubed zucchini (3/4" sq.)
1 chopped onion
1-2 cloves garlic, chopped
Salt & pepper
Parsley
Sweet basil
2 tbsp. butter
2 tbsp. flour
2 c. milk

Cook in broth, zucchini, onion, garlic and spices until zucchini is well done.

In saucepan melt butter. Add flour. Stir. Add milk slowly to make white sauce and cook until done. Adding additional broth from soup (as needed). Then add white sauce to soup. Simmer together until done.
