MOTHER'S CREAM OF BROCCOLI SOUP
 

1 sm. onion, thinly sliced
1 green onion (white part only), thinly sliced
1 sm. stalk celery, finely chopped
1 tbsp. butter
1/2 c. water
2 tsp. salt
Dash cayenne pepper
2 tbsp. uncooked rice
2 c. chicken broth
2+ c. cooked broccoli, coarsely chopped
1/2 c. cream or milk - do not add if planning to freeze soup

Place first 5 ingredients in a 2-quart saucepan; simmer slowly 2 minutes over medium heat. Add salt, pepper, rice, 1 cup broth; simmer 15 minutes. DO NOT BOIL!

Pour broth mixture into blender; blend until liquefied. Return to pan. Blend cooked broccoli and remaining cup broth until liquefied. Add broccoli to mixture in pan. Heat BUT DO NOT BOIL. (Add milk if desired and if not freezing.)
