TUNA MACARONI & CHEESE
 

2 c. macaroni
2 tbsp. butter or oil
2 tbsp. flour
2 c. milk
Salt & pepper to taste
1 c. green or red pepper, chopped
1 med. onion, chopped
4 oz. Velveeta cheese
1 can tuna, drained
Parmesan cheese to cover top

Cook macaroni until tender and drain. To make white sauce, heat butter (or oil) and add flour and stir until mixed and smooth. Add milk; stir and cook until thick. Add salt and pepper to taste, peppers, and onion and cook for a few minutes. Add cheese and stir until melted. Add tuna and stir until mixed. Add macaroni and stir until mixed. Pour in greased baking dish and sprinkle top with Parmesan cheese. Cover dish with plastic wrap and bake in microwave for 10 minutes on High heat. Turn dish and continue baking for 10 minutes more.
