2 lobsters (1 - 1 1/2 lbs. each) 6 tbsp. virgin olive oil 4 sprigs parsley 1 tsp. thyme or oregano 1 sm. onion, minced 1 clove garlic, finely chopped Pinch of ground cloves Pinch of mace Salt & pepper 2 c. cooked tomatoes 1/4 c. brandy Plunge lobsters into large pot of boiling water and cook one minute to kill them. Remove from water and split lengthwise. Heat the oil in a large skillet, add lobsters and cook gently for about 10 minutes. Add the seasonings, herbs and tomatoes. Cover and cook an additional ten minutes, stirring often. Arrange a ring of cooked rice on a large serving platter. Put the lobster halves in the center and pour the sauce over them. Add the brandy and blaze just before serving. Serves 4. |
