CRUSTLESS CRAB QUICHE
 

4 oz. frozen crabmeat, flaked
1/4 c. chopped scallions
1/4 c. chopped mushrooms
1 c. evaporated skim milk
1/2 tsp. dry mustard
Dash of paprika
4 oz. shredded cheddar cheese
1/4 c. chopped green pepper
4 eggs (or equivalent Egg Beaters)
1/2 tsp. salt
1/8 tsp. pepper

Press crabmeat, cheese, scallions, peppers and mushrooms into bottom and sides of 1 1/2 quart casserole coated with vegetable oil spray. Beat eggs, milk and seasonings and pour over the first ingredients. Sprinkle paprika over the top. Bake at 400 degrees for 30 minutes or until set; let stand 5 minutes before serving.
