2-3 lbs. boneless chicken, cut into lg. shrimp like size pieces or 2 (6 oz.) pkgs. frozen shrimp 1/2 lb. butter 4 cloves garlic, minced 1/2 med. onion, minced 1 tbsp. parsley 1/4 tbsp. dried dill 1/2 tsp. salt 1/2 tsp. pepper 1/2 tbsp. oregano Microwave butter, garlic, onions, parsley, dill, oregano, salt and pepper. Put chicken or shrimp in casserole dish and pour butter/herb mixture on to. Bake for 10 minutes in 350 oven. Separate and bake another 10 minutes (or in microwave, cook on high for 4-5 minutes turning and separating). Serve over rice or spaghetti and garlic toast to absorb scampi sauce. |
