SKEWERED SHRIMP WITH VEGETABLES
 

18 lg. shrimp
Zucchini
Plum tomatoes
Canned white potatoes
1/4 c. honey
4 tsp. grated orange rind

Peel and devein shrimp. Cut zucchini in half lengthwise and then into about 12 pieces. Thread shrimp and vegetables alternately onto skewers. Combine honey and orange; brush over skewers. Broil 6 inches from coals, turning often and basting frequently with honey mixture, about 8 to 10 minutes or until shrimp is bright pink. I parboil the zucchini first. May also be made with chicken cutlets.
