Makes 3-4 quarts of batter. 1 lg. yellow onion, sliced 1 lg. raw potato, ground 2 eggs, beaten with 1/2 c. milk 1 c. Bisquick or flour 2 tsp. baking powder 1 c. bread crumbs or crackers 2-3 green onions, chopped (optional) 3-4 green garlic leaves, chopped (optional) 2-3 sm. leeks, chopped & added to onion (yellow) when sauteing (optional)
Spices: Pepper Garlic powder Seafood seasoning Spike Tarragon Thyme Johnnies lemon pepper Sweet basil Curry powder Paprika
Use any of these or all of them.
Saute the yellow onion. Then green onions, green garlic leaves and leeks may be sauteed with the yellow onion also. While sauteing the onion, mix all of the ingredients, first 7, in a large 6 quart Dutch oven. Mix well. Add the spices you prefer and mix again.
Get the frying pan nice and hot, use olive oil or canola oil and drop 4 balls of mixture into the pan. (I use an ice cream scoop) and pat them flat with a wet wooden spoon. Fry until nice and brown. Experiment until you get the correct heat. Fry each patty on both sides. Dry each patty on paper kitchen towels and keep in a covered container to keep nice and hot.
Serve with green salad, cottage cheese and garlic bread. Delicious! They taste even better if you dig your own clams.
