3 lbs. deveined fresh shrimp 2 c. rice 2 lg. onions, chopped 1 sm. bottle stuffed olives and juice 2 med. cans tomatoes 2 lg. bell peppers, chopped 2 sm. datil peppers, cut up Saute onion and bell pepper in bacon grease; add cut up hot peppers, sliced olives and tomatoes. Bring to boil, add uncooked rice and salt to taste. Cook VERY SLOWLY to prevent burning; lift rice several times with two-tined fork during cooking. DO NOT STIR! When rice is nearly done, add shrimp on top of rice, as shrimp turns pink lift rice with fork, mix shrimp into pilau. |
