2 to 3 lb. shell shrimp (med.) or deveined frozen
1 pkg. Ekrich smoked sausage or 6 to 7 hot links
2 sm. cans hominy (white or yellow)
1 lb. fresh okra or small frozen bag
1 med. onion, chopped
1 chicken (any size) boiled and boned (save broth)
1 pkg. of your favorite gumbo seasoning
6 c. cooked rice
Cook shrimp until bright orange, peel, devein, rinse with cool water.
Add hominy, okra, sausage, onion to water with gumbo seasoning, boil. Add shrimp and chicken. Serve hot over rice. Can be frozen up to 2 weeks.
