SNOW PEA AND LOBSTER STIR FRY
 

Stir fry lobster with fresh snow peas for an impressive dish. Ounce per ounce, lobster is a health choice, 1 ounce has only 27 calories. 4 tbsp. olive oil 2 lg. ripe tomatoes (1 lb.), stems removed, chopped (2 c.) 4 green onions, chopped (2/3 c., use white part & most of green) 1/2 c. dry white wine 1 tbsp. freshly squeezed lemon juice 1/2 tsp. salt 1/3 c. chopped fresh basil 1 tsp. minced garlic (1 med. size clove) 8 oz. fresh snow peas, ends snipped

Bring large pot of water to a boil. Add lobsters, cover and steam until lobsters turn red, about 6 to 8 minutes. Remove, let cool. Crack lobsters over bowl, catching juices; remove claws, set aside. Scrape tomalleys (the green livers of the lobsters) into a bowl with juices. Remove meat from lobster tails and upper section of claws, cut tails into 1" circular pieces and remaining meat into 1" pieces; set aside.

Heat 2 tablespoons olive oil in a large skillet over medium high heat, add tomatoes, green onions, wine, lemon juice, salt, reserved lobster juices and tomalleys. Cook about 10 minutes, stirring occasionally until thickened. Fold in lobster meat and basil. Stir fry 1 minute. Remove from heat, keep warm.

In medium size skillet, heat remaining 2 tablespoons olive oil over medium high heat, add garlic and snow peas, cook 2 minutes, stirring constantly. Arrange snow peas in bed on platter. Spoon lobster mixture in center of snow peas. Serve immediately. Makes 4 main dish servings.
