MANDARIN SALAD
 

1 lb. fresh spinach and/or Romaine lettuce, washed and drained
1 (11 oz.) can mandarin orange segments, save juice
1 red onion, thinly sliced
1 sm. pkg. sliced almonds
Juice from orange segments
Italian vinegar and salad oil OR spicy dressing such as Wishbone, Kraft, 7 Seas
Optional additions: Diced red apple, pineapple tidbits

Tear greens into bite sized pieces. Place in bowl layering with fruit, nuts and onions. Mix mandarin orange juice with equal or slightly greater part of Italian dressing. At serving time, stir dressing and pour over salad. Serves 6 to 8.
