2 cans black beans, drained and rinsed 1 c. chopped tomato 3/4 c. chopped sweet red pepper 2/3 c. sliced green onions 1/2 c. chopped celery 1 tbsp. lemon rind 1 clove minced garlic 2 tbsp. cilantro leaves 1 c. Italian salad dressing 1/4 tsp. red pepper Combine all ingredients and chill, preferably overnight. Toss before serving. |
