2 cucumbers, sliced 1 med. onion, sliced 1/2 c. vinegar 2 1/2 tbsp. sugar 1/4 c. water
Slice cucumbers and onion. Mix sugar and water together until dissolved. Add vinegar to sugar and water. Pour over cucumbers and onions. Let stand for 1 hour in refrigerator. Serve as salad.

My husband and I absolutely love this salad. Becase I watch my sugar levels, I substitute Splenda and it is just as delicious and refreshing. Because the vinegar acts as a preservative, it can be kept for many days.
