Serves about 4 2 or 3 carrots, grated 1/2 jicama, grated Leaves from Boston, red or green leaf lettuce (or any mild flavored lettuce), washed, dried and torn into manageable pieces 1 ripe papaya, sliced 1 handful unsalted peanuts, chopped Zest from 1 to 1 1/2 limes Thai dressing (below) Mix above ingredients together and toss with dressing. THAI DRESSING: 2 tbsp. sesame oil 2 tbsp. hot chile oil 1/4 c. rice vinegar 1/4 c. tamari (or less if like less salty) Whisk ingredients together. Shake before serving. |
