1/2 lb. elbow macaroni, cooked, drained & chilled 1 c. diced celery 1/2 c. minced scallions or 1 sm. yellow onion, peeled & minced 1/3 c. minced sweet green and/or red pepper 1 c. mayonnaise 2 tbsp. white vinegar or lemon juice 2 tsp. prepared mild yellow mustard About 1 1/2 tsp. salt 1/8 tsp. pepper Mix all ingredients, cove and chill several hours. Taste for salt and adjust. Garnish with tomato wedges and quartered hard cooked eggs. |
