BARLEY SALAD
 

2 c. cooked & well drained pearled barley (1/2 c. uncooked)
1/2 c. water chestnuts, drained & sliced
1 c. chopped celery
1/4 c. chopped green pepper
1/4 c. chopped pimiento
1/4 c. chopped sliced onions
1 c. chopped broccoli
1 c. chopped cauliflower
Any raw vegetables, carrots, etc. (opt.)
1 c. cooked cubed ham
1 pkg. Italian Lite salad dressing mix
1/3 c. sugar
1/2 c. vinegar
1 c. lite mayonnaise

Mix together first 9 ingredients, cover and chill overnight. In a jar mix the dressing mix, sugar, vinegar and mayonnaise. Shake well and chill overnight.

To serve, mix the dressing and vegetable mixture, serve over lettuce leaves. Makes 5 to 7 cups depending upon the vegetables used.
