1 c. bulgur wheat (med. grind if possible) 1/4 c. olive oil 1/4 c. red wine vinegar 1 c. fresh chopped parsley, lightly packed 1/2 c. green onions, finely chopped 1/4 c. fresh chopped mint 3 tomatoes, diced 1 cucumber, peeled, seeded and chopped 1 tsp. salt Freshly ground pepper to taste 1. In a bowl combine bulgur with enough water to cover. Let stand for one hour. Drain well. 2. Add oil and red wine vinegar; mix lightly. 3. Add parsley, tomatoes, green onions, cucumber and mint; toss to mix. Cover. 4. Chill for at least one hour or longer. Add salt and pepper to taste. Serve over bed of lettuce. 10 servings - 130 calories per serving. |
