MARINATED BEEF SALAD
 

1 to 1 1/2 lbs. round steak
2 c. fresh asparagus, sliced diagonally into 2 inch slices
2 to 3 bunches broccoli, cut into bite size florets
Fresh mushrooms, sliced (optional)

GINGER DRESSING:

2/3 c. soy sauce
1/2 c. vinegar
6 tbsp. sesame oil
3 inch slice of fresh ginger, peeled and grated
2 tsp. sugar
White pepper to taste

Broil round steak to desired doneness. Cool and slice in 2 to 3 inch pieces. Combine all ingredients for dressing; toss with slices of steak. Refrigerate overnight. Blanch asparagus and broccoli florets, approximately 30 seconds. Drain well and cool. After the meat has marinated in the dressing, toss in vegetables and mushrooms, if desired. Serve the salad freshly tossed with the dressing/marinade.
