CURRIED SEAFOOD SALAD
 

1 c. rice
1 lb. lg. shrimp
1 tsp. salt
3/4 c. mayonnaise
Water
1/3 c. milk
1 cooked crab leg
2 tbsp. lemon juice
2 tbsp. olive oil
1 1/2 tsp. curry powder
1 (4 oz.) can pitted olives, chopped
2 celery stalks, chopped
Lettuce leaf

Prepare rice (steam) and chill. Clean shrimp. Steam and refrigerate to chill. Steam crab and chill.

Mix mayonnaise, milk, lemon, olive oil and curry with shrimp to blend. Gently stir in rice, crab, celery and olives. Line platter with lettuce and spoon seafood on platter. Makes 4 main dish servings.
