TOMATO AND BUFFALO MOZZARELLA SALAD
 

2 to 3 lg. tomatoes, sliced thick
1 fresh Buffalo Mozzarella, sliced (Buffalo Mozzarella is packed in water and sold at most deli counters)
1 red onion, sliced
1 bunch fresh basil (4 to 5 tbsp.)
Olive oil
Red wine vinegar
Salt and pepper to taste

On serving platter, arrange tomatoes, cheese, and onion in an overlapping pattern. Sprinkle chopped basil generously over salad. Drizzle oil, vinegar, salt, and pepper to taste.
